These individual chocolate and liqueur trifles are served in tall glasses to go to a touch of elegance.

  1. 1 3/4 cups Cool water
  2. 1 tablespoon cocoa powder
  3. 40g butter, chopped
  4. 1/2 cup caster sugar
  5. 1 tablespoon cornflour
  6. 1 teaspoon vanilla extract
  7. 2 tablespoons sherry, liqueur or brandy (optional)
  8. 300ml thickened cream
  9. 18cm sponge cake, cut into cubes
  10. 2 ripe pears, quartered, core removed and diced
  11. 60g dark chocolate, shaved
