  7. 1/2 cup red onion pickled, OR extremely thinly sliced red onion, divided into rings
  8. 1/2 cup cilantro leaves
  9. 1 1/2 pounds bone-in pork shoulder blade roast
  10. 1/4 cup ancho powder
  11. 1 tablespoon smoked paprika
  12. 1 tablespoon coriander seeds toasted*
  13. 1 1/2 teaspoons cumin seed toasted*
  14. 2 teaspoons salt
  15. 4 teaspoons olive oil lead pro 2 tablespoons
  16. 24 ounces Mexican beer
  17. 2 cups water
  18. 1/2 cup apple cider vinegar
  19. 2 tablespoons chipotles in adobo finely chopped
  20. 1 onions small, sliced and on bad terms into rings
  21. 4 cloves garlic chopped
